Bologna and Egg

Breakfast Sandwich

3 slices of Seltzer’s Smokehouse Meats Original Bologna
1 large egg
2 tsps. chives, thinly sliced
2 Tbsps. red pepper, diced
Pinch each of salt and ground black pepper
¾ oz. sharp cheddar cheese, grated (about 3 Tbsps.)
Thinly sliced tomato
1 Tbsp. butter
1 multigrain or whole wheat “sandwich thin”
Fresh spinach leaves

Toast bread.

Place slices of Seltzer’s Bologna in medium-heat skillet. Heat each side for 30 seconds. Place onto bread.

Whisk egg in a small bowl. Grease skillet with butter over medium heat. Pour whisked egg onto skillet. Rotate skillet so egg reaches edge of skillet.

Sprinkle chives and red pepper on top of egg. Add salt and pepper.

Fold over edges of egg to fit bread you are using.

Flip egg over and top with cheese. Turn off heat under pan and let stand for about 1 minute until cheese is melted.

Place on top of bologna. Top with spinach, tomato slice and remaining toast.
